What Do I Eat?

Introduction
I am often asked what I eat.  The body that my essence inhabits was born in 1953.  (Notice that I didn’t say ‘I’ was born then, just my earth-suit that takes me from womb to tomb in this earthly experience was.  That’s a supremely important distinction.)  Deeply knowing who you are – and Who walks beside you always — is a big part of the equation about how you eat.  Living optimally on earth requires less dense foods when you know you are an integral, infinite, eternal, and beloved part of All That Is.  Deeply  remembering that also helps you treat your body like the temple of the soul that it is.

I feel happy, healthy, and energetic almost all the time.  When I don’t, I can usually evaluate the cause and correct it.  I weigh only five pounds more than when I graduated from high school.  My nutritional program is an integral part of all that.  I’m not bragging or saying I’m so great.  I am sharing keys that can help almost everyone to enjoy those sublime levels of being.

The way of eating I’ll describe may seem boring or difficult to you.  I love great tasting foods, but many years of eating healthfully have altered my definition of what tastes good.  Almonds taste sweet, fresh berries are heavenly, and I love my health drinks.  Most importantly, feeling great almost all the time is much more important than eating unhealthy foods that are sweet, fatty, processed, and convenient.

Except for occasional small servings, I avoid wheat, soy, sugar, and dairy products from cows.  Those often cause a day or two of depression, fatigue, brain fog, sinus drainage, and/or intestinal upset.  I also avoid nonorganic foods since those are chemically laden and grown in nutrient-deficient soil.  For over forty years, I’ve refined this way of eating that works very well for me.  I have eaten a nutrient-dense, semi-vegetarian diet for most of that time.

Note: I regularly enjoy prayer, yoga, meditation, and time in nature.  Every aspect of my life is working wonderfully: great health, loving relationships, prosperity, meaningful lifework, inner peace, happiness, and spiritual awakening.  All of those factors increase, balance, and refine my energy.  As a result, I don’t need the quantity of heavy foods, especially animal products, that I once did.

I also pray over my food — just a brief giving thanks and honoring the life force in the food that is being transmuted.  Nothing prolonged or showy so I can do that in public.  I like to briefly put my hands over the food as I send this thanks and recognition that all life is one.

I believe in the following credos: ‘Eat to live, not live to eat’, ‘You are what you eat’, and ‘There are other ways to get energy besides eating.’  I also am aware of the good evidence that we each are part of Source right now and sacredly interconnected with all people, animals, and Life Itself.  As such, I strive to eat so that no animals die.  My diet also contributes to planetary sustainability since a plant-based diet doesn’t require deforestation, fecal pollution, methane gas release, and other deplorable agri-business practices.

My whole food maintenance supplements from Standard Process and the daily number in parentheses include: Catalyn (6), Trace Minerals B12 (3), and Cod Liver Oil (3).  I take CardioPlus (3) for my cardiovascular system and Symplex M (3) for endocrine support.  Cataplex B (3), Cataplex G (3), and Cataplex B12 (1) support my numerous system and are important because of my vegetarian diet.

Because of these supplements and what I eat, I feel pleasantly full after eating less food.  My body isn’t always hungry ‘for something else’ and searching for key nutrients that can’t be found in devitalized foods.

Some people believe they can’t afford organic foods.  However, you might be surprised at how little you spend when you primarily prepare healthy meals at home.  In addition, ‘convenience’ and junk foods are expensive.  Finally, as mentioned, you will need less food when you follow this way of eating.

You may wonder how much time it takes to prepare meals this way.  Breakfast is super quick.  I can prepare two days-worth of my mid-day meals — Vitality Drinks and Protein Smoothies — in 20 minutes.  Listening to music or audio-books while preparing the drinks makes that seem like even less time. I store them in insulated containers like Hydro Flask in the frig so they are fresh for a day or so.  I usually work from home but can prepare those drinks and take them with me if I’m not.

For dinner . . . my fiance is an excellent cook and created tasty and super-healthful meals 3 – 4 times per week.  Andy makes granola and crackers in a dehydrator with raw seeds, nuts, and dried fruits.  She makes wonderful soups, chili, pesto, pottage, etc. from ultra-vibrant looking vegetables, herbs, legumes, etc.  As an RN, acupuncturist, essential oil clinician, yoga teacher, and nutrition-based practitioner, an optimal diet is also a priority in her life.  Her website is AndyLLee.com; her favorite recipe sources are:

Listening to music or audio-books makes that seem like a vacation.  If you don’t want to or can’t cook, pickup healthy soups and food at whole food restaurants and groceries.

I don’t recommend completely switching to my way of eating overnight since it is such a big change for most people.  However, I strongly encourage doing so if you desire to lose a significant amount of weight, heal yourself of serious symptoms or a named disease, or enjoy more vibrant living.  Otherwise, consider incrementally moving in this direction.

As always, I’m not recommending this to replace advice from your medical doctor.  I am sharing what works for me now.  My diet has changed over time and I feel it’s been a natural evolution.  Please check with your health care team before making dietary changes, especially if you have a diagnosable disease or significant symptoms such as truly high cholesterol or blood sugar levels.

I recommend the following practitioners on that team: integrative medical doctor for crises who understands the power of natural health care and works with your other team members, chiropractic physician, acupuncturist, deep tissue massage therapist, and nutrition-based practitioner.  Visit Nutrition Response Testing or Applied Kinesiology to find the latter in your area.

The foods I eat are healthfully raised with sustainable agriculture methods whenever possible.  The foods are organic or beyond organic, fresh, GMO-free, chemical-free, and not radiated, and mostly raw.  The term ‘raw’ means the foods were not exposed to temperatures over 115 degrees Fahrenheit so nutrients, enzymes, and cofactors aren’t devitalized or destroyed.

I’ve used an ‘intermittent fasting’ approach for eight years.  I usually eat dinner by 7pm and don’t eat solid food again until 12 noon.  That schedule may differ for you depending on when you arise, how active you are, your weight and health status, and other factors.  I take a handful of wholefood supplements three times a day with 16 ounces of water.

That, my diet, exercise, and a healthy hormonal system are the biggest reasons I am trim at my age.  Wait until your stomach feels empty before eating the different drinks at breakfast.  Then wait until you feel hungry again before your lunch and dinner meals.  Feeling hungry can be a little scary at first but, in time, it feels great to be lighter versus bloated and stuffed.

If I don’t feel like having the vitality and protein drinks on a certain day, I eat meals from the Light Evening Meal list, but that rarely happens.  I usually travel with my VitaMix so I can enjoy the drinks even while away from home.  Note: see Healthy Drinks* recipes below. 

My Real Food Way of Eating

Morning
I start with 16 ounces of pure warm water with juice of a freshly squeezed lemon.  An hour later, I have a drink that contains good fats and little glucose; this encourages my body to burn fats instead of sugar.  Those drinks include:

  1. Breakfast Butter Tea*
  2. Golden Milk*

That takes me to noon or thereafter when I’m ready for my mid-day meal.

Mid-Day (I usually eat the following but sometimes have something from the Evening list)
1. 32 oz. Vitality Drink*

2. serving of green tea with a tspn of honey IF my body weight is good; no honey if not.

3. 32 oz. Protein Smoothie*

Evening
(I usually eat by 6:30pm to avoid indigestion / reflux at night)

1. large mixed vegetable salad, nuts, fresh fruit, and avocado if desired

  1. gluten-free Middle Eastern, Asian, Indian, or other ethnic foods
  2. yogurt from almond or coconut milk with fresh berries, granola, and nuts
  3. steamed or sautéed vegetables with brown rice/noodles, or quinoa
  4. soup with vegetables, grains and/or legumes
  5. hummus or guacamole with gluten free crackers or chips and sliced vegetables
  6. trail mix with raw nuts, seeds, granola, and dried fruit
  7. healthy — for example, from Standard Process or Garden of Life — protein bar with raw nuts
  8. rice cakes or toasted Ezekiel bread with raw almond butter and fruit jelly without sugar
  9. gluten-free cereal with chopped nuts, berries, and almond or coconut milk
  10. raw goal cheese with gluten-free crackers or melted on Ezekial bread
  11. healthy muffins with non-gluten flour, nuts, seeds, and fruit

“Snacks” (I usually have these late afternoon but with an early movie once or twice a week)

  1. three times per week: healthier snacks listed, usually dark chocolate or popcorn with pasture-raised butter and brewer’s yeast. Also gluten-free healthy potato chips, corn chips, pretzels, or other relatively healthy snack
  2. gluten-free pizza once or twice per month
  3. rarely, a decadent dessert such as healthy ice cream, gluten free chocolate chip cookies with nuts and dried fruit, or flourless chocolate cake. Just being able to have it sometimes helps me to usually not want it.

Bedtime
If I’m hungry, a cup of Bedtime Butter Tea* but I almost never need this.

*Health Drinks

Vitality Drink
42 ounces pure water, scoop of Garden of Life (GOL) Raw Greens, ½ lemon, 1 stalk celery, 4-inch section cucumber, ½ tsp. Sea or Himalayan salt, 4 Hawaiian spirulina tablets, 4 chlorella tablets, handful spinach leaves, 1 TB pumpkin seeds, 1 TB sunflower seeds, 1 TB hemp seeds, 1 TB chia seeds, 1 TB black sesame seeds, 1 large carrot, 1/4 small beet, 1 small apple, few sprigs of parsley, 2-inch piece of turmeric, 2-inch piece of ginger, handful of sunflower and/or kale sprouts.  I also add two servings of the best seasonal powdered mushrooms such as Reishi, Chaga, or Cordyceps.  Makes 64 ounces of nutrient-dense drink with extraordinary energy and satiety.

Protein Smoothie
32 ounces water, 8 ounces berries, 40 grams raw plant-based protein powder or whey protein from GOL or Standard Process (SP), 1 TB flax seeds, 1 TB Calcifood Powder (SP), 1 tspn Calcium Lactate powder (SP), 2 TB collagen from Great Lakes Gelatin, handful raw nuts, ice; 1 TB coconut oil (two if memory loss) unless you drink Butter Tea / Coffee (makes 64 oz.)

Cacao Energy
24 oz water, 3 TB almonds, 1 TB coconut butter, 1 TB cacao powder, 1 tspn Lacuma powder, ½ tspn Mesquite powder, dash cinnamon and sea salt.  Makes two servings.

Green Tea: 12 ounces water, serving of green tea, 1 tspn raw local honey  

Breakfast Butter Tea / Coffee
16 ounces pure water with tea or coffee, 1 tspn pasture-raised butter, and 1 TB MCT oil.  (If weight isn’t an issue, you can use 1 tspn Artisana coconut butter as well.)

Golden Milk
32 ounces of hot water, 2 TB. of raw almond butter, 2 TB. of coconut butter, 2 heaping tspn. of tumeric powder, and a few dashes of cinnamon and cardamom.  Blend at low speed in a Vitamix or blender.  Makes two 18 ounce servings.

Bedtime Tea (If you have trouble staying asleep because of hunger)
12 oz water, relaxing herbal tea, dash cinnamon, tspn raw honey, 1 tspn coconut butter

Note:
1. the first three drinks are best made with Vitamix blender (Vitamix.com)  A certified used model is about $300.  It lasts many years and is a great investment.

2. all ingredients should be raw, non-GMO, and organic (chemical free).  These drinks provide a wealth of nutrients in convenient and tasty ways.
